Lazy Girl's Southwestern Chicken Burritos

A shockingly simple, home-made solution to the desire for Mexican food.

, I let you in on my favorite dirty little secret for curbing a Chinese food craving. But let's be honest-when you're pressed for time, Chinese isn't the only cuisine that will tempt you to reach for the phone or head for a drive-through. Greek, Mexican, Thai...the map of the world can turn quickly into a giant, painfully realistic buffet in your mind when hunger strikes.

One of our readers helpfully reminded us that TV dinners may be unhealthy for some, so they can't always be turned to as a substitute. Whether you're watching your sodium intake or simply want to stock up on the nutrients that come from more natural food sources, taking out the time to produce a tasty, responsible meal on your own is generally regarded as the better choice.

But how do you balance the tiring responsibilities of everyday life - the appointments, groceries, homework - with this inconvenient need to treat your body well, too?

As our reader suggested, you arm yourself with a collection of healthy recipes that take less than 10 minutes to prepare.

Kitchen Daily and Shape.com are excellent resources for exploring speedy nutrition options, and we can't overlook the versatility of the crockpot, but for today I'd like to share a number from my private arsenal. It came together by accident one day when I hadn't shopped for groceries in almost two weeks and needed to get creative.

The ingredients are as follows:

Lazy Girl's Southwestern Chicken Burritos

  • Boneless, skinless chicken breast
  • Olive oil or cooking spray
  • KC Masterpiece Barbecue Seasoning
  • Whole wheat tortillas (I used Ole XTreme Wellness)
  • Organic Salsa
  • Greek yogurt
  • Fillers; low fat shredded cheese, lettuce, etc. (Optional)


My favorite thing about this meal is that it takes virtually no time to cook, whether you flood the pan with enough to feed an army or you pare it down into individual portions. Here's how it works:

  1. Using meat shears or a chef's knife, dice chicken into small chunks and set aside.
  2. Warm a bit of non-stick cooking spray or olive oil (olive oil is a great source of healthy fats) in a large skillet over medium heat.
  3. Add the chicken pieces, sprinkle liberally with barbecue seasoning, and simply turn with a wooden spoon or spatula until the outsides are crispy and the middle is white.Β 
  4. In the meantime, you can load up your tortillas with salsa and Greek yogurt, then fill them out with lettuce, cheese, tomato and more; whatever you'd normally use for a garnish. ο»Ώ
  5. The result is a lowfat, flavor-packed burrito, with the tart, satisfying suggestion of sour cream in the background coming from the yogurt, with none of the guilt.

I've done at least a dozen variations on this meal since I came up with it, from baking the finished product under a layer of homemade cheese sauce for a few minutes (enchiladas!), to adding a bit of hot wing sauce and bleu cheese crumbles for a buffalo chicken wrap when a guest had a craving. The possibilities are endless. But when I'm in the mood for fast, easy and delicious, the basic model I concocted from that day of dreadfully limited options is one of my go-to choices.
